Hemp Avocado Bread

If you eat as many bananas and avocados as we do you’ll be obsessed with this bread. It’s fluffy and light with just a hint of sweetness. We adapted this recipe to make it gluten-free and less sugary. Enjoy it toasted and topped with grated cheddar cheese, cream cheese, almond butter or plain.

2 cups brown rice flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon kosher salt
2 large ripe bananas
1 ripe avocado
1/2 cup coconut sugar (or maple syrup)
1/4 cup milk (or unsweetened almond milk)
1 teaspoon vanilla extract
2 large eggs
1/2 cup of hemp seed
2 tablespoons chia seeds
2 tablespoons flax

Preheat oven to 350º

Mix all the ingredients together in a large bowl. Blend well (with electric mixer, if possible)

Line loaf pan with baking paper. Spoon the batter into the dish and bake for about 65-70 minutes.
