Peanut butter bomb cookies (gf / vegan)

Our living space and kitchen are on top of each other, which means we can’t really keep our extremely curious and eager toddler out of the action when cooking. It also means he’s obsessed with cooking and spends lots of time “doing dishes” and pretend cooking. I love this recipe, because the simple ingredients (and no raw eggs) means that he can actually help! If you love peanut butter, you will be obsessed with these!!

  • Dry ingredients
  • 1 cup coconut sugar
  • 1 tablespoon cardamon
  • 1 cup oats (blended into oat flour)
  • 1 tsp baking soda
  • Pinch of sea-salt
  • Wet ingredients
  • 1 cup natural peanut butter
  • 2 teaspoons pure vanilla
  • 1/4 cup almond / coconut milk

Preheat the oven to 350F. Line baking sheet with parchment paper. Combine all ingredients in a mixing bowl. I do dry first and add the wet ingredients second. Mix well. Spoon batter onto baking sheet forming small balls (they will spread substantially). For regular sized cookies use tablespoon or ice cream scoop. For itty bitty cookies use 1/2 teaspoon to scoop cookie dough. Bake for 10- 12 minutes.
