Peanut butter bomb cookies (gf / vegan)

Our living space and kitchen are on top of each other, which means we can’t really keep our extremely curious and eager toddler out of the action when cooking. It also means he’s obsessed with cooking and spends lots of time “doing dishes” and pretend cooking. I love this recipe, because the simple ingredients (and no raw eggs) means that he can actually help! If you love peanut butter, you will be obsessed with these!!

1 cup natural peanut butter
1 cup coconut sugar
2 tsp pure vanilla
1/4 cup almond milk
1 cup oats (blended into oat flour)
1 tsp baking soda
punch of sea-salt

Preheat the oven to 350F. Line baking sheet with parchment paper. Combine all ingredients in a mixing bowl. Mix well, with an electric mixer if possible. Spoon batter onto baking sheet forming small balls (they will spread substantially). Bake for 10 minutes.
