The best banana pancakes

  • We recently upped our banana pancake game thanks to Trader Joe’s gluten free flour. Previously I always used oats or almond flour which creates a denser pancake. Trader Joe’s GF flour is a nice little blend of brown rice flour, potato starch, rice flour and tapioca flour that makes pancakes super fluffy. Here’s the full recipe:
  • Ingredients
    • 1 ripe banana
    • 1 egg
    • 1/4 cup gluten free flour
    • 1/4 cup oat milk
    • 1 tablespoon flax
    • 1 tablespoon chia
    • 1 tablespoon cinnamon
    • 1 tablespoon apple cider vinegar
    • 2 tablespoons maple syrup
    • 2 tablespoons coconut oil
    • Pinch of salt

    Instructions

    1. Combine all ingredients in the blender for at least 30 seconds
    2. Once the batter is smooth spoon onto a nice hot griddle pan greased with coconut oil (preferably cast iron) and fry. Flip halfway through and cook until golden brown
    3. Repeat until batter is gone.
    4. Enjoy
