Naked Lemon Garlic Nuggets

These nuggets are the perfect topping for a salad or grain bowl. They are full of flavor, slightly crispy and ever-so moist!! It’s officially TICK SEASON and apparently ticks are repelled by garlic so we’ve been adding fresh garlic to almost every recipe. Dont worry though it’s not overpowering. Just a little bit goes a long way….so vampires beware!

Ingredients: 

  • 2 lbs breast chicken – sliced into long strips
  • 1 tablespoon coconut oil
  • 1 teaspoon finely chopped garlic
  • few pinches of salt
  • juice of 1/2 lemon
  • 2 tablespoons balsamic vinegar
  • few pinches of salt

Instructions: 

  1. Add coconut oil to your skillet and set to a medium heat
  2. Once the pan is nice and warm add the garlic and let it cook for a minute or two
  3. Add the chicken to the pan and salt generously
  4. Squeeze the juice of lemon over the chicken
  5. Turn regularly using tongs, making sure to seal the chicken on all sides. After a few minutes add the balsamic and continue to fry the chicken
  6. Once the meat is completely cooked through turn up the heat slightly and allow the juices to lightly brown the chicken.
  7. Allow to cool and enjoy!
